Boiled eggs

Boiled eggs are one of these things you either love or hate. Personally, I love them and would happily munch on a cold boiled egg at any time of the day.

But, if for some reason (God forbid!) you find yourself with some leftover boiled eggs, here are some great ways of using them up.

1.Egg Salad

Mash boiled eggs with mayonnaise, mustard, salt, pepper and some chopped pickles or herbs and use as a sandwich filling or as a side to a salad. Personally, I’d just mix it with the mayonnaise and, if you want to go old school, salad cream also works as well. It’s got a different taste, but it’s nice.

2. Devilled Eggs

I love devilled eggs. I only discovered my love for them when I made them for a party one year. They are so good. So, you take your cold boiled egg, cut it in half length ways (not around the middle) and remove the yolks. Mash the yolks with some mayonnaise, a little mustard, vinegar and seasoning. Then spoon or pipe the mixture back into the egg halves and serve. Here’s a great recipe from the BBC for Devilled Eggs.

3. Egg Curry

I’ve not tried this one, but it does sound delicious. Simmer boiled eggs in a rich and spicy curry sauce with onions, tomatoes and spices such as cumin and turmeric. Serve with rice or a naan bread. Here’s a recipe for an alternative curry, a Keralan egg curry.

4. Cobb Salad

Add boiled eggs to a Cobb salad along with grilled chicken, bacon, avocado, blue cheese and a lovely dressing. Here’s a great Cobb salad recipe for you.

5. Egg and Avocado Toast

This is a delicious and wholesome recipe for egg and avocado toast. Make your toast, mash some avocado on top of it, season and add sliced boiled eggs. Yum.

6. Pickled Eggs

I love pickled onions, beetroot and even cabbage, but I must admit I am not a fan of pickled eggs. However, if you are, it’s a great way to preserve them. Here’s the recipe.

7. Egg Fried Rice

Add chopped boiled eggs to your fried rice along with fried vegetables such as baby sweetcorn and onions, add some soy sauce and stir. Serve.

8. Potato Salad

Again, I’m not a fan of potato salad, but I know loads of people who love it. Boiled eggs make a love addition to a potato salad. Simply chop the boiled eggs and mix it with cold cooked potatoes, mayonnaise, mustard and fresh herb. Here’s a recipe for potato salad.

9. Boiled Egg Tacos

Slice boiled eggs and add them to soft tortillas along with a home-made salsa, avocado, lettuce and a squeeze of lime. Delicious!

10. Niçoise Salad

You can’t have boiled eggs without having a Niçoise salad. Cut your eggs in half and add to tuna, olives, cooked green beans and cooked potatoes. You’ll find a great recipe here. You can use tinned/canned tuna instead of fresh. It’s cheaper and easier to do.

11. Egg Biryani

I love a biryani, it’s a great way of using up leftover meat. But you can add cut up boiled eggs to the dish for an extra boost of protein. Here’s a great recipe for beef biryani, but if you’re veggie there’s loads of great veggie biryani dishes online.

12. Egg and Spinach Wrap

You can do this recipe two ways. The first is to slice up boiled eggs and add to sauteed spinach, cheese and your favourite sauce (such as salsa) in a tortilla wrap. The second (and my preference) is to slice up boiled eggs and add it to raw spinach, cheese and some sauce in a wrap. It’s entirely up to you.

13. Breakfast Burrito

Add chopped up hot boiled eggs, chopped cooked bacon, grated cheddar and some cooked baked beans to a tortilla wrap. Wrap it up and enjoy for breakfast. Instead of boiled eggs, you could use scrambled eggs instead. You could also replace the chopped bacon with avocado or add salsa to the mixture for something a little different.

14. A Ramen Topping

Slice boiled eggs and place them on top of a bowl of ramen for an extra layer of flavour and richness. Here’s a great ramen recipe.
