I don’t know about you, but I’m terrible about not using up plain yogurt before it goes off. I hate that I do this, but I never know what to use any leftover yogurt in.
So, I went on the internet and had a wee scout around (so you don’t have to) and found these ten clever ways of using up yogurt.
- Smoothie – blend together leftover yogurt with frozen fruit and a banana. If it’s too thick, add a little bit of milk to get the correct consistency.
- Yogurt dressing – mix plain yogurt with a little lemon juice, olive oil, crushed garlic and some herbs (fresh or dried). Whisk it all up together and serve over salad or whatever you enjoy a yogurt dressing with.
- Yogurt dip – combine plain yogurt with herbs (fresh or dried), garlic, cucumber and a little salt. Put it in a bowl and serve as a dip along with with raw carrots, cucumber sticks and other raw vegetables.
- Yogurt pancakes – when making pancakes replace the milk in the recipe with the yogurt. Delicious.
- Yogurt marinade – mix the plain yogurt with curry spices, crushed garlic and lemon juice. Spoon over raw chicken or lamb. Leave for at least an hour, then grill or bake in the over.
- Yogurt ice lollies – mix the plain or fruity yogurt with some chopped-up fruit and freeze as ice lollies. Leave to harden for a few hours and then enjoy.
- Baking with yogurt – did you know that you can substitute buttermilk/sour cream with yogurt in baking? Well, you do now. You can also substitute some of the butter or oil in a cake recipe resulting in a light and moist cake.
- Add yogurt into your home-made bread or rolls for a delicious soft texture. Just substitute some of the water for yogurt.
- Top baked good with yogurt – add some fruit, nuts and/or honey for added yumminess.
- Cooking with yogurt – add a little yogurt to curries to add creaminess. Do it near the end of cooking so that the yogurt is still warmed up but doesn’t split.
